These beef birria tacos are rich, high in protein, and loaded with flavour from slow-cooked beef and melted cheese.


WHY THIS RECIPE IS GREAT

Birria tacos are messy in the best way. The beef is slow-cooked until tender, then stuffed into corn tortillas with cheese and fried until crispy. You also get the broth from the beef, which takes these tacos to another level when you dip them in.

This recipe packs serious protein with balanced fats and carbs. It is a proper heavy meal that works well after training or if you just want to eat something filling that still hits your macros.

BEEF

Slow-cooked in garlic, onions, chipotle paste, and beef stock until tender. The broth doubles as a dipping sauce for the tacos.

CORN TORTILLAS

These crisp up beautifully in the pan and soak up flavour from the broth.

CHEESE

Adds a gooey texture inside the tortilla. Helps bind the beef and keeps the tacos rich.

CORIANDER

Fresh, bright, and balances the deep beef flavours.

  • 10g chipotle paste
  • 2 cloves garlic (6g)
  • 100g onion
  • 6 corn tortillas (100g total)

  • 200g potatoes

HOW TO MAKE BEEF BIRRIA TACOS

  1. Start by searing the beef chuck in a heavy pot with olive oil until browned on all sides. Remove and set aside.
  2. In the same pot, add chopped onion and garlic. Fry until soft. Stir in chipotle paste.
  3. Pour in beef stock and return the beef to the pot. Cover and simmer on low heat for 3–4 hours until the beef is tender and pulls apart easily.
  4. Remove the beef and shred it using two forks. Keep the broth in the pot.
  5. Heat a pan with a little of the broth and place the corn tortillas in. Add cheese and shredded beef to one half, fold, and fry until golden and crispy.
  6. Serve with roasted potatoes on the side.

TIPS AND TRICKS FOR THE BEST RESULTS

Make sure to brown the beef properly at the start. This builds the base flavour for the broth.

Keep the heat low during the long cook. Rushing the beef will make it tough instead of tender.

Dip the tortillas in the broth before frying them. This gives that signature rich, red crust.
