HOW TO MAKE BEEF BIRRIA TACOS
- Start by searing the beef chuck in a heavy pot with olive oil until browned on all sides. Remove and set aside.
- In the same pot, add chopped onion and garlic. Fry until soft. Stir in chipotle paste.
- Pour in beef stock and return the beef to the pot. Cover and simmer on low heat for 3–4 hours until the beef is tender and pulls apart easily.
